Egg Substitutes

When your baking recipe calls for eggs but there aren’t any around you can replace 1 egg for:

o    1 mashed, overripe banana – this acts like an egg by holding the mixture together

o    1 TBSP of ground flax seed (this may need to be mailed to you by someone far away) to 3 TBSP water – stir until the mixture become sort of slimy. This will also hold together a mixture, give you some good protein, and help the cookies/cake/bread a bit more fluffy.
